Inspired by nature, Cambium at Carey Manor Hotel is a creative and enchanting dining experience. The name is inspired by nature, reflective of their love affair with the New Forest and the desire to showcase the rich natural resources abundant in the local area.

As the UK has become a premier wine producing region, Cambium also boasts one of the biggest collections of English wines in the country, featuring vineyards such as Marlings, Exton Park, Nyetimber and Goring.
The interior of Cambium was create by designers Sue and Bonnie Stowell. Their inspiration came from the New Forest itself with nature leading the way on the design scheme. Hand painted English trees adorn the walls, the chairs are upholstered in moss like fabric and bespoke oak leaf golden screens seperate the diners, introducing an intimate dining experiences.
